Baby Corn and Chili Stir Fry

I don’t claim to be a vegetarian, but this dish is a fantastic vegetarian meal.

Baby Corn and Chili Stir Fry

Something I have trouble explaining to my carnivorous friends, is that you don’t need meat on your plate to feel full. A nice vegetable stir fry can do the trick. It is warm and comforting, and best of all delicious.

2 cups of chopped baby corn
1 chilli pepper
3 cups vegetable stock
1 orange pepper
1 1/2 cup of 10 minute rice or brown rice
Garlic salt
Onion granules
Olive oil or Safflower oil

This is a very quick and easy way to eat fresh, healthy food. I like making this when I need a fast food option for lunch or dinner.
Slice the chilli pepper in half and fry in a pan along with a splash of olive oil, rice and chopped orange pepper until rice has browned. Pour in the chicken stock slowly as you continue to stir. Keep it simmering for the next 10 minutes, and add garlic salt and onion granules to taste. Pour out on your plate and enjoy!
