Dia’s Broccoli and Cauliflower Vegan Cheese Bake

1 cup of unflavored rice milk cream or 1 cup of unflavored soy yogurt
1 tsp hot chili powder
2 tsp ground black pepper
2 tsp garlic powder
1 avocado
2 orange bell peppers
2 tablespoons of nutritional yeast
1 crown of broccoli
1 crown of cauliflower
1/4 cup of glutinous white rice flour
Preheat oven to 360 degrees f
Roast the orange bell peppers until soft.
After roasting them put in a food processor to purée them.
Peel and stone the avocado and mash with a potato masher.
Chop the cauliflower and broccoli into floret sized pieces and set aside.
In a saucepan heat the cream or yogurt along with the, avocado, pureed orange bell peppers, chili, black pepper and garlic.
When the mixture comes to a boil set aside and
add in the yeast and flour.
Take the broccoli and cauliflower pieces and place in a casserole dish.
Pour the spicy vegan cheese sauce over the broccoli and cauliflower and set aside for 30 minutes.
Once it has set place in the oven for 35 minutes.
It will come out of the oven crispy and oozing with flavor.
Serves 4
