Well, this is my first post in too long. I have been busy with things like edema, breathing difficulties, kidney pain and random masses popping up all over, and needless to say I haven’t been feeling all that wonderful.
I hope you enjoy this recipe which I made over a month ago and just never got the chance to post it on my blog here.
Basically what you will be doing is creating a dough which you can either turn into cookies or tiny brownies.
100g of plain flour
1/4 tsp of bicarbonate of soda
1/4 tsp of baking powder
125g of unsalted butter or vegan alternative
175g of soft dark brown sugar
25g of caster sugar
1 egg or vegan egg alternative
1 tsp of vanilla essence
175g of oats
100g of chocolate chips or 1 small bag
Preheat your oven to 180°Celsius(356°F)
In one bowl mix the dry ingredients:flour, sugars, oats, baking powder and bicarbonate of soda
In another bowl mix the butter, egg, vanilla essence and chocolate chips
Slowly mix the two bowls together and then form into a nice dough.
You can either set it aside in the fridge to set more, or use as it is.
Get a nice square brownie dish and spoon out the dough and spread evenly around the dish.
If you are choosing to make cookies instead line two baking trays with greese proof paper and spoon the dough onto the trays. Should make about 15 big cookies.
Put in the oven and bake for 15 minutes for the brownies and 10 minutes for the cookies.
