Fifth day of Christmas-Vegan Christmas Fudge

I had so much fun making this today, and it is extremely simple to put together in a few minutes. In England we have something called Christmas Pudding, Christmas Cake and so on. What these Christmas desserts consist of are a variety of dried fruits and nuts. I thought, “Wouldn’t it be fun to make a candy that used the same idea?” On the Fifth Day of Christmas Dia brings to you her Vegan Christmas Fudge.

1 cup mixed dried fruit and nuts (you can usually buy these by the bag at any supermarket or health food store)
2 cups caster sugar
1 cup icing sugar
1 cup golden syrup
150 g bar of vegan white chocolate
150 g bar of vegan milk chocolate
1 cup of vegan spread (Vitalite worked great)
Melt both the white and milk chocolate in the microwave to save time.
Combine all ingredients in a large mixing bowl.

Place mixture on a baking sheet, while evenly spreading it out with a wooden spoon.

Leave to set in fridge for an hour or so.
Cut into fudge size pieces.

Place in tiny boxes with tissue paper if you are giving it away as a gift or serve in a dessert dish. ![]()
