Apple Tart (Gluten Free&Vegan)

Apple Tart (Gluten free and Vegan)I was inspired by the cover recipe of this month’s issue of delicious magazine to bake an apple tart. Mine however is gluten free and vegan! I used puff pastry like they did in their recipe only when making puff pastry that is gluten free and vegan, it is a bit trickier. Here is the recipe for the pastry first:

The Gluten Free & Vegan Puff Pastry
2 cups gluten free flour blend (I also use the Doves Farm blend)
1.5 teaspoon of salt
3/4 cup of cold water
8 oz of soft vegan spread (Pure, Earth Balance)

Sift the flour twice and form it into a well on top of a large wooden board..
Add the salt, water and melted vegan spread into the well.
Mix with fingers until the salt has dissolved and the vegan spread has turned into tiny pieces.
Slowly work the pastry into the well until it forms a sticky ball.
Wrap the ball of pastry dough into greaseproof paper or saran wrap and place in fridge for about 25 minutes.
Turn out onto a lightly floured surface and knead for 5 min while forming a rectangle.
Roll out the dough in one direction only, until 3 times the width.
It is OK for there to be vegan spread streaks, it should have a marbled effect.
Fold one side over to the other and then the top to the bottom and roll out again. Do this twice.
Fold again and wrap in cling film.
Store in fridge until ready to use. Take out 10 minutes before rolling out.

Making an Apple Tart
Cut an 8 inch circle out of the puff pastry sheet and set aside. You will also need:

2 Bramley Apples – cored, peeled and sliced
1/2 cup of muscovado sugar
1/4 cup of molasses
2 tsp of ground ginger
2 tsp of cinnamon

Lay out the puff pastry circle on a baking tray.
Prick the edges with a fork.
In a bowl mix the sliced apples in with the ginger and cinnamon.
Spread the molasses onto the puff pastry.
Place the sliced apples onto the puff pastry in whichever pattern you prefer.
Sprinkle the sugar on top of the apples.
Bake in oven for 20 minutes at 190°Celsius (375° Fahrenheit)

Thanks delicious for the idea! Shame it wasn’t gluten free or vegan, but that is where the fun challenge comes in for me!

    Hi, thanks guys! Christine, compared to ordinary non vegan and non gluten free puff pastry, this is much healthier for you because the flours it is made with are lighter (rice, bean, etc.) and the butter isn’t really butter at all, it is vegan spread and has 70% less saturated fat from butters and
    No hydrogenated oils
    No artificial additives
    No GM ingredients
    No gluten
