It is possible to have a healthy double chocolate chip cookie. Let’s remember what it is that makes a cookie unhealthy… Usually the butter, the eggs and the refined sugar. Even though all of my recipes on here are vegan, and I never use real butter or eggs, the vegan spread or “vegan butter” depending on which brand you use, can be filled with some type of vegetable oil. Most brands, especially in the UK, are basically solidified vegetable oil that you can spread on your toast in the morning or use to bake with.

Replacing the butter or vegan spread in these cookies with avocado immediately lowers them in trans fatty acids and adds the wonderful vitamin C.

Now if you just can’t stand the idea of chocolate cookies tasting like avocado, don’t worry! You can’t taste it. You are getting all of the healthy benefits by using avocado without it messing with the overall flavor. Trust me these are some tasty chocolate goodies right here!

A Healthy Double Chocolate Chip Cookie? That’s Right! (Gluten Free & Vegan)

Ingredients

1/2 cup mashed avocado

1 bag dark chocolate chips (100 grams)

1/2 cup rice flour

1/4 cup tapioca flour

1/2 tsp baking soda

1/4 cup unrefined caster sugar

1/4 cup muscovado sugar

2 tsp vanilla extract

1 tsp cider vinegar

1 tsp cinnamon

2 tablespoons unsweetened cocoa powder

Instructions

Preheat oven to 350 degrees F (180 degrees C)

Cream the avocado and the sugar together in a food processor.

Add in the vanilla extract, cider vinegar, baking soda, cocoa powder, cinnamon and mix.

Add in the flour and mix.

Take the cookie batter out of the food processor and put into another mixing bowl.

Stir in the chocolate chips.

Place a piece of parchment paper over a cookie sheet.

Spoon out approximately 1 tablespoon sized scoops of cookie dough, spreading evenly, on the parchment paper.

You will want to either flatten them a bit with the bottom of a spoon or shape them how you like before baking because avocado does not spread like butter. These cookies will retain most of their shape while baking.

Bake for 10 minutes turning the tray around half way through.

Allow cookies to sit for a few minutes before placing on a cooling rack.

Enjoy these delicious chocolaty treats knowing that they have absolutely no butter, no refined sugar, no gluten, no dairy and no eggs!
